21 Day Fix Extreme Recipe: Chicken Fajitas

I have been doing the 21 Day Fix Extreme and along with a wonderful workout, you can also enjoy some awesome recipes.  This has turned into a new family favorite.  The one think I like about this program is that if your nutrition is off this is a great help.  Not only does it make clean eating a no brainer, you get to eat delicious meals that won’t leave you feeling deprived.

Now if you’re a busy person like myself I can save myself some time by purchasing a nice rotisserie chicken and cut the breast.  What a time saver.

If you have extras you can make it a Now & Later meal.  You know eat some now and save some for later like tomorrow’s lunch.

This recipe makes 4 servings and 2 fajitas each

Ingredients:
1tsp chili powder
1/2 tsp. sea salt
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp olive oil, divided, use
4 (5-6oz) raw chicken breast, boneless, skinless, cut into 1/2 in strips
1 medium red or green red bell pepper, cut into thin strips
1 medium onion, thinly sliced
1 tbsp fresh lime juice
8 large romaine (or butter) lettuce leaves
1/2 medium avocado, thinly sliced
1 cup fresh salsa
lime wedge for garnish optional

Directions:
Combine chili powder, salt, cumin, garlic powder, and 1 tsp oil in large Ziploc storage bag.   Add chicken, bell pepper, and onion; mix gently to coat.  Refrigerate for 15 minutes.

Heat remaining 1 tsp. oil in large nonstick skillet over medium-high heat.

Empty contents of bag into skilled; cook stirring frequently, for 5 to 6 minutes, or until chicken is cooked through.

Remove from heat.  Add lime juice.

Evenly top lettuce leaves with chicken mixture, avocado and salsa.
Garnish with lime wedges if desired.

Containers:  2 Green, 1/2 purple, 1 red, 1/2 blue

Before You Eat Do This

Clean Eating Challenge Day 4. So far we talked about what clean eating is, substitution not deprivation. Hydrating with water, now let’s talk about how you eat.

Do you eat quick, fast, and in a hurry? Are you eating at your desk, I n front of the tv? Be honest. When was the last time you sat down and really enjoyed your food?

Healthy living does mean more home cooked meals. When you think about most comfort foods, they are what mom or grandma made – from “scratch” what is now more commonly referred to as “whole foods”. It taste so good and as my kids will say you can taste all the love, hugs, and kisses in it ☺ which is true.

So take your time to sit down, honor your body and enjoy the food you’re fueling it with.
Eat with your eyes – enjoy how it looks, the presentation. Give thanks.
Smell the flavor – smell the herbs and spices. This will enhance the tasting experience.
Chew your food – completely chew each bite before you raise your fork for the next bite.
All these steps help you to keep the pounds off.  Just by slowing down alone, you allow your stomach to get full before you over fill it.  Chewing your food completely will assist in the digestive process.

Lose Weight With This Fat Burning Fruit

We are getting ready for a Clean Eating Challenge this month where I will share tips that helped me to lose weight without exercising.  Now don’t get me wrong I love exercising but there was a time when I could barely move and I knew I had to transform my body from the inside out. Did you know a cup of cherries are less than 100 calories and packed with 3 grams of fiber.  You can cook with cherries, eat them as they are, or juice them. Cherries are low on the glycemic index with a score of 22.   Here are a few benefits you can reap when eating cherries:

Cherries automatically make you slow down and enjoy them because you don’t want to swallow the pit.  Yes slowing down to actually chew and taste your food helps you to lose weight.

Cherries are a great anti-inflammatory food, they help fight free radical cells, help you to sleep better, they are good for your eyes and much more.

Power Packing Protein Balls Recipe

Mix all the ingredients in a bowl. Once everything is mixed together, roll into balls and place on a lined baking sheet. I like to roll in unsweetened coconut flakes before I place them in the refrigerator. The coconut flakes are totally optional.
Place the baking sheet in the fridge for 30 minutes or so. Once the balls are cold you can place them in an airtight container where they should be eaten within 72 hours.
You can use any kind of protein powder for these balls, but I highly recommend giving hemp protein powder a try. Living Harvest and Nutiva are two great brands of unrefined, pure hemp protein.
